Ever since I was diagnosed with Celiac Disease when I was fifteen years old, I automatically assumed that all breads, pastries, and basically anything delicious could no longer be part of my diet. I was used to eating coffee crumb cake, cereal, and pancakes for breakfast and sadly I had to switch to yogurt and fruit because of my new diagnosis. I had pretty much given up on ever having fluffy pancakes for breakfast again until Betty Crocker came out with a new Gluten Free Bisquick mix last year!
This morning I followed the recipe for pancakes on the back of the box, but tweaked it a little bit to remind me of pancakes I ate during my childhood. I sprinkled semi-sweet chocolate chips on the top of the pancakes while they were cooking. I also sliced up a banana, very thin, and added a couple of slices to each pancake. They were so good and I can't wait to put my spin on more Betty Crocker recipe's!
Here is the pancake recipe that was on the back of the Bisquick box:
1 cup Bisquick Gluten Free mix
1 cup milk (I prefer 1%)
2 tbsp vegetable oil
1 egg
STIR ingredients until blended
POUR slightly less than 1/4 cupfuls onto hot greased griddle
COOK until edges are dry. Turn; cook until golden.
Makes approximately 10 pancakes

I'm so glad you posted about cooking because I was considering posting about cooking too. Thought it was a little too off topic, but happy to see its not you'll be sure to see some baking stuff on my blog. I understand how rough it can be to have Celiac's Disease, this past year my roommate had it. And being the big baker I am it was hard for me to bake without feeling guilty. Thanks for the alternative idea for pancakes I heard gluten free diets are healthier for you anyway.
ReplyDeleteThe camp I used to work at had a week where they would invite kids with Celiac Disease and make sure there was food provided for them. I thought it was really incredible how much food there was out there without gluten! Their food often looked even better than what the rest of us were having. That is so crazy that you didn't find out about your intolerance until you were so much older. I'm sure it would be hard for me to have to give up some of the things that I love to eat that have gluten, but I'm happy to know that I could still eat some of the same foods with a slight variation in the ingredients. I'm glad you can have your pancakes again!
ReplyDeleteI have never heard of Celiac Disease until your post! I bet that some days it must be really hard to avoid certain foods, especially since you were used to eating them earlier in your life. I'm glad that you were able to find this great recipe for pancakes! I bet this recipe is WAY healthier than regular pancakes. One of my goals this summer was start cooking a lot more. I actually love cooking and this might be the next recipe I try and conquer. I'll let you know how they turn out!
