Last night after dinner my Dad got a craving for something sweet. This usually isn't an issue for a "normal" person, but my Dad is on cholesterol medication so I try to help him watch what he eats. The "something sweet" that he was craving usually packs a punch of cholesterol and fat. Two things that he definitely does not need. However, I felt bad because I know what he goes through since I have to eat gluten free.
I started shuffling things around in the pantry and found a Betty Crocker Gluten Free Yellow Cake Mix. I looked at what the recipe called for on the back of the box (eggs, butter, and water). Everything looked fine for him except the butter. I decided to substitute the butter with applesauce. Yes, applesauce! It cuts out the fat and cholesterol and helps keep the cake moist.
I quickly whipped up the cake in a Kitchen Aid mixer and let it bake in the oven at 350 degrees for 30 minutes. It turned out great! Some fresh strawberries and low fat whipped cream is a great alternative to the traditional heavy icing.

I think your blog is great! I've been watching the Food Network a lot recently so I've been in a cooking mood. Shows like Cake Boss, Cake wars and stuff like that really just make want to get in the kitchen and start cooking. This recipe sounds really easy and delicious.
ReplyDeleteI never think about substitutes when I bake things. Applesauce sounds really interesting but worth trying out. My dad has some heart and cholesterol issues as well so this could be a great alternative for him. The camp I usually work at during the summer makes a HUGE cake on the 4th of July using whipped cream, strawberries for the stripes and blueberries for the box in the upper left corner. I bet you could also cut out star shapes from a pineapple or something if you wanted to be accurate. It is so delicious and maybe you could try it out as a patriotic treat with your gluten-free cake!

I'm actually going to go to the grocery store tomorrow and I will probably end up picking up some of the Gluten-Free cake mix. I have never tired it before, so I mind as well give it a go! I've been trying to eat healthier since it is now swimsuit weather! I would have never thought to substitute butter for applesauce. I'll give it to you, that's pretty genius. Did the cake taste a bit like applesauce? I love strawberry shortcake so this would be a great, healthier option! Thanks for sharing your awesome recipes!
